Beef Enchilada Mac and Cheese

Ingredients:

1 (1 lb) box pasta shells (medium-sized, uncooked)

1 lb ground beef (uncooked)

1 small (or 1/2 large) onion (chopped)

2 cups whipping/heavy cream

2 cups colby jack cheese (shredded) – or you can use a mix of colby jack and cheddar

1 (10 oz) can red enchilada sauce (I use medium spice level to give it a little kick but nothing too crazy)

1 tsp. ground cumin

1 tsp. kosher salt (or sea salt)
